Dean, this class is going to be set up just as it was last year so I can explain how it will go.

It is designed to simulate a 4-meat competition which is why the class begins on Friday evening.  The students will receive step by step instruction on how to select, trim and prepare/season meat for competition in a classroom-like set up and then receive one on one instruction as each student goes through the process of trimming and preparing the meat they will actually cook on site.  There will be instruction on theory as well as technique and Brent and Kim will be acting as personal coaches as well as teachers throughout event.  You will be provided with instruction on how to prepare each cooked meat for your competition turn in boxes and will then participate in judging the food cooked by all the teams in the class.

The class will consist of all aspects of a competition including, tentative time frames and awards just like a regular contest.

Beginning Friday night at 4:00 pm
Introduction
Discussion/ Demonstration
1. Organize
2. Sauces and Rubs
3. Meat preparation
4. Injections and marinades
5. Cooking Methods
6. Equipment/ Accessories
7. Judging class (not a certified CBJ class) You will judge other students.
8. Dinner provided

Friday 9:00pm-12:00am
1. Getting long meats prepared & start cooking (Brisket & Pork)
2. Getting chicken prepared
3. One on one time for each team cookers and methods

Saturday 12:00am- 6:00am
1.Quiet time...get some sleep
2.Cooking activities will continue
3. One on one time for each team cookers and methods

Saturday 6:00am
1.Getting ribs prepared
2.Re-visit chicken methods

Saturday 8:00am
1.Preparing turn in boxes for presentation

Saturday
12:00pm Chicken turn in
12:30pm Rib turn in
1:00pm Pork turn in
1:30pm Brisket turn in

We will have all teams participate in judging

Saturday 2:00pm
1.Judging review

Saturday 3:00pm
1.Awards

Saturday 3:30pm

This is an outline on the class structure. You will gain the knowledge to have you competing at the upper levels. Think of this class as an investment in your BBQ. It should pay you back many times. This class is designed for a beginner that has a few contest under their belt or no competition at all. This is not an advanced class but you will learn to compete that way!

We need to finalize the arrangements for this class. Those of you that are interested please make a commitment as soon as possible so we can prepare for the classes.

It appears that the north class is a sure thing and the southern class is not demonstrated enough interest to date. We will have to make a decision in the next couple of weeks. Any questions please call Brent at 559-298-9350


Anyone in Arizona who is interested in taking this class in Southern California should sign up as soon as possible or the class will probably be cancelled.

More importantly is that all of the results from the students who took the class improved incredibly.  Yes, there were some GC's and RGC's, but the overall quality from everyone was much better.

AZBarbeque highly recommends this class to any and all people interested in getting into the BBQ Competition world or improving upon the skills you already have.

I personally took the class last year and if I didn't already have another commitment for this year, I would be back out there in a heartbeat.

I took the class as well and it was fantastic ! I knew how to BBQ already,but for competition,it's a whole different game ! The money and time spent is well worth EVERY pennny and more.I got some trophies out of it already, and sure am glad I took the class.Thanks go out to Kim and Brent Walton :)
