Smoking meat for Mexican food

My wife's family is having their Christmas party on Monday. They have a tradition of eating mexican food for their party. They make some great food! A few years ago I talked them into letting me smoke the meat that they use to make the mexican food and now everyone is hooked! ;D ;D

So right now my WSM is full with a 15 pound chuck roll and two 8 pound pork butts. It should be some good eating tomorrow!!  ;D ;D

And if you guys ask really nice I will post some of the recipes they use! Yum!! ;D ;D

Ok here is one of my favorites!


Chalupa

10-15 lb beef brisket
1-2 cloves garlic, chopped
1 tsp. ground cumin
1 sm. can diced green chile
1 lb. pinto beans, (uncooked) sorted and washed
2 TB. chili powder
1 tsp. oregano
1 TB salt


Smoke the beef brisket. Then place in large roaster with 1 gallon can of cooked pinto beans. Add seasonings and chilies and bake at 250 for about 3 hours. Remove from pan and remove all fat and chunk meat. Return to pan and add 1 jar of Salsa. (about 2 cups)

We serve with freshly made flour tortillas and all the fixings and great homemade hot sauce and enchilada sauce if desired. (I also like to cook this with a large chopped sweet onion.)

 For a twist on traditional Mexican christmas fare...smoked pork or beef tamales ( I can give you a recipe for the meat filling), and smoked turkey mole!!!!!

Had some leftover brisket and tried ddogs Chalupa recipe. I had to waste good brisket, but man was that ever good. I guess the next time I do a brisket, I'll have to do two.

I have some left over Pork and Brisket from a practice cook last night.  I think I will go to Food City and get some fresh roasted Hatch Chilie and have the leftover's mexican style.
