I am thinking tamales.  I love smoked tamales, get some whole hatch and make a chilie relleno too, oh man I am getting hungry.


The kids had ribs for breakfast.  ;D

I routinely add some taco seasoning, I know in a pinch and something easy, to pulled pork and stuff that into tacos to fry them.  They are a little on the greasy side but the flavor is amazing.  Plus, it is a good way to use up leftover pork or brisket. :)

Great suggestions.  I have about 3 lbs of PP left over in the freezer, I thought about Carnitas, but how about pork and cheese stuffed Chile Relenos?
