Christmas Day around 12 oclock, time to put on the turkeys. One in the smoker and one on the rotisserie. They should take around the same amount of time to cook. The Stoker is keeping the smoker at 300 using a little Kingsford mesquite charcoal and some chunks of pecan wood . The turkey on the smoker is rubbed with a mesquite / paprika and sea salt rub and is mounted on a Turkey blaster/ beer can type rack.
There is no smoke on the gas grill/rotisserie, and keeping it around 300 also. This turkey is injected with a Cajun seasoning and 1 stick of melted butter.I figure around 3 hours to cook

More pic to come as we go along
Merry Christmas to all

Looking great Colt, keep posting the pics so we can live vicariously through the forum. I am doing a smoked ham in the oven. Nothing special today for the smoker.

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Well, tons of people stopped by to eat. Couldn't get away to get more pics. Have 1 morethat I could get before everyone descended on the turkeys. All turned out great. and the smoked one was far and above the best bird of the day. That is not to say that the rotisserie bird was not fantastic. Made stuffing out of the drippings and giblets, went too fast to get a pic.
Hope your Christmas was as good as ours
