I grilled an 8-lb. beef tenderloin in my #9 Kamado. I didn't want it have a strong smoked flavor because we had just eaten a turkey I had smoked with almond wood. I used a bag of Matchlight I had kicking around. My Kamado was up to 700 degrees within 10 minutes!
Crazy stuff. I doubt I'll ever use it again, except many as a firestarter. But because of they way a tenderloin tapers down I was able to satisfy everyone, from medium rare lovers to well done eaters.
