Quiet crowd tonight!
Dealing with the typical UDS chaos. 2 13lbers on at 9:30 this evening. Both already about 165.
Due to the way it cooks ( faster ) it always causes me to doubt the Therma Pen, doubt the meat, etc. Anyway, trying a heat diverter in UDS now, hoping to slow things down. Otherwise, I'll be tossing into the cooler about 3:30 and hoping things stay hot till I get there.
On another note, the beer is still cold.....
