Nope, never done CASI Chili but more than willing to learn.  We need to put that cast iron dutch oven to use!

Looks like we may get Grandfathered again too!

Thom this is excellent news and makes me wish we could figure out how to do Stagecoach.   Melanie and I have been competing in Chili events off and on for about 4 years.  Are you going to do the reduced rate for Red/Green chili entry fees if the teams participate in people's choice?  That's always a big draw at the events we do.   At our last event we passed out 3 gallons of peoples choice, which can be made ahead of time and contain anything you want.  Some promoters request that you add filler, rice/pasta, but we usually don't.
 
Vince, I wouldn't use cast iron.  The acid in the tomatoes can leach nasty flavors out of cast iron IMHO.  A good heavy bottom stainless steel pot works best.

CASI chili cannot have any noticeable chunks other than the meat and must be a specific grind.  Your butcher can do that for you.  We exclusively use chuck as the fat content provides a very tender meat.  No fillers either for CASI, i.e. beans, rice, pasta etc.  Goya Sazon is a MSG flavoring agent you'll want to get to know as well.

Stagecoach will higher than usual CASI cook offs
Each Cook will get two tickets to the Sunday Concert
$100 plus  Two gallon PC Chili
We will also have gift cards for our winning cooks


We will be starting a California POD also

What's the $100 get other than the Sunday tickets?

Just wondering because for the red/green chili and showmanship CASI clearly states and will enforce.

Section V.B.2. NO CASH PRIZES - CASI rules prohibit the sanctioning of any cookoff giving cash prizes for chili
cooking or showmanship. Regional, Open, State, State Men’s and State Women’s Championship
cookoffs may award state champions expense money to travel to the CASI Terlingua International
Chili Championship cookoff and CASI may request proof that this money was used for expenses.

Not trying to twist you up on this but CASI and all the chili folks I've met over the years take the "points over money" stuff real personal since it's all about getting enough points to get to Terlingua

There will be no CASH prizes
But I am told by the CASI folks Fuel Gift cards to get a cook to Terlingua are acceptable
There will be more than one CASI  event in California
We fill be starting POD (local organization)
This as you know is a 6 point state so with a few events we can send a few cooks to CASI World Championships

For some reason I thought CA was a 12 point state, but 6 point definately makes it easier.

Are you doing cash for the PC piece, since that's not sanctioned?

Damn, I wish I could figure out how to get to this.
