Well Been a very long time it seems since I put a post up. I decided to start a new post for this build as this will save time when posting new pics and updates. Here is the grill / offset smoker I am building. Yes, it will serve two purposes, but not both at the same time. These pits will be offered in two sizes 24 x 36 and 24 x 48, the picture shown is the 24 x 48. Here is the layout. The Pit will have an adjustable shelf like a Santa Maria grill and one fixed grate when smoking. Which can be removed and replaced with a charcoal grate when grilling. Spacing between the grates will be between 6 - 7 inches, they will measure 21" x 45". The pit will be set up with a reverse flow system. Meaning the heat will travel below the full length of the grill then back and exit the exhaust. The exhaust system will be a 5 inch diameter pipe measuring 15 inches tall. This should set up a nice draw. The pit will not incorporate gaskets as my other pits have, but this should not be a factor. Its fabricated from 3/16 steel plate and built to last. If you have a pit similar and have a suggestion to offer up or idea let me know. Also if you have a good name for it to represent our territory arizona I will be happy to consider it.
