I need to cook 170 pounds of pork butts for a wedding, and all I can round up is a double pitt with electric motor. I was thinking about tying 4 butts around the spit, the length of the spit. I would rather use a large smoker, however I don't know anyone who has one. I thought I could get the temp to 225 and use a bed of charcoal while throwing some hickory logs on there?
Anybody with experience doing this??
