Jim, I agree with you about the actual "FoodSaver" brand of vacuum sealer. I've owned a FoodSaver (a Vac 1050) for about 8 years and it finally gave up the ghost this past fall. We replaced it with a V2940 that we saw on super sale at Costco just before Christmas for $110.00. As you said, the one touch/one try operation is great and I hope this one lasts as long as the last one.
The only thing I don't like about the new models is that the vacuum channel is so far away from the sealing bar. On the other hand, the sealing bard is much wider on the new models and makes a much better seal. I guess it all balances out in the long run.
Oh, one accessory that is worth the cost is the wide mouth jar sealer. We've begun making our own sauces and being able to vacuum seal the batches is really handy. It is also a great way to preserve batches of homemade rubs. You can store them in your pantry in quart sized jars and they'll stay fresh for months.
