I am going to try something a little different. I am thinking i will go to the olive bar at the store here and get about 1 1/2 lbs of mixed. feta stuffed olives, artichoke heart and roasted red pepper mix, than grab a container of cherubs (grape tomatoes) and cut into halves. The baby mozzerella in the container with the water. couple packages of 4 cheese tortellini, or maybe one of the 4 cheese, and one of the mushroom.
in the food processor i will put in a couple cloves of garlic...(when using raw garlic. cut the clove and remove the germ in the middle. this will eliminate the bitterness), a couple handfulls of sun dried maters, 1/2 lbs of shredded parmesan, couple handfulls of basil, maybe a little tarragon, sea salt and pepper to taste and drizzle in ext. V. olive oil till becomes smooth while mixing in the food pro.
Cook up the pasta in boiling water with salt, pepper and a spalsh of olive oil to season. drain and toss with the pesto, than fold in the veggies and mozz.
