Perogies
5 cup flour – 3 eggs – 4 tablespoons sugar – ½ teaspoon salt – 12 or more tablespoons water.
Filling: mashed potatoes – ½ cup – cheese – ½ cup – onions finely chopped – ¼ cup salt and pepper to taste.
Mix first 5 ingredients with enough water to make medium soft dough. Knead by hand until dough holds together. Rest for ½ hour, roll thin cut into squares 3 X 3 add filling, egg wash one side and press together. Drop in boiling water, when they rise to the surface about 5 minutes till done. I melt a lot of butter in a skillet and swish around the peorgies till they are butter colored.
Serve with caramelized onions and sour cream --- cold beer
This recipe came off a yellow piece of paper from my Grandmother --- there was some “holes” but she could make them blindfolded.

Hey Jim,  Tried a couple of time to make pierogies without success.  Getting the dough right is my problem.  I'll try your recipe and see how it goes.
