Wife and the kid's whipped this up for dinner tonight.  It was some of the best sushi I have had that didn't have fish in it.  Basically a variation on a California Roll. If you have youngsters, this is a great way to entertain them and have them contribute to meal time.

6 sheets of Nori (the seaweed)
2 C cooked Sushi Rice (cooked rice mixed w/ a warmed sugar & rice vinegar solution)
1 package shredded imitation crab (6 sticks)
2 dozen shrimp, sliced in half (70/90's)
1 avocado sliced thin
1 peeled cucumber sliced thin, seeds removed
wasabi to taste

Lay out Nori
Spread about 1/6 of rice onto lower half of Nori
Add shrimp, crab, avo, cuc and wasabe in whatever order you desire
Roll that badboy up tight with a bamboo sushi mat wrapped in saran wrap
Cut into 6 pieces (make sure knife blade is moistened before each cut)
Sprinkle w/ toasted sesame seeds (optional)
Serve with Soy sauce

Eat fast because it goes quickly.

We love to make Sushi at our place too. I am sure that Ryan (my 11 year old) can eat more than I.  Add a New Yark roll to the mix, salmon (smoked or raw, your choice) Diced red Onions and cream cheese. yummy
