Mark,
I have used Masa Harina in pizza dough for the thin n crispy texture, still testing... you have to use it more sparingly than I did the first time..

Ooh. I gotta try that out. I always use bread flour. Lately I have been using bulk pizza dough mix from Winco. Really works well.
