Hello all. As the title says another new guy. I am Mike and have not been in AZ long, Air Force and at Davis Monthan. Originally from Kentucky and coming here from England after 12 years.
Not new to smoking/BBQ but looking forward to getting as much info as possible for doing it here in AZ. I am used to cooking in the cold and rain. I prefer oak but am looking forward to trying some of local stuff.

Got some rubs down there too, IIRC! And Pecan is yummy...but a friend brought a bunch of oak over, and I like it too!
Welcome to the forum. I am of Brit heritage, and I love good bourbon...That takes care of England and Kentucky...

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

I just saw firewood from Tucson at Whole Foods. It is promoted as being environmentally favorable because it was from trees that had to be cut down. It looked to be mesquite, citrus and pecan and some other unidentifiable stuff mixed in. Thankfully, I didn't see any palo verde.
