Hello all. I have been grilling for years ( 4 to 5 times per week) but am new to the smoking game. I was actually in the market for a second grill for Turkey day when on an impulse I bought a cheapo Charbroil smoker. I was instantly hooked. I have done 4 shoulders, Turkey legs, whole chickens and ribs. I enjoy competition and my wife and I have been watching Pit Masters. We decided it is time to step up and start practicing for the comp in Prescott in a few months.
This site has given me an amazing amount of insight to the processes and methods.
So today I broke out the welder and put in a heat/smoke diffuser plate and made the smoker into a reverse draft unit.
I prepped some thighs from leg quarters and some spares. I have always enjoyed cooking and making my own rubs, so away we go. I will post up pics tonight of the results. So far I am very pleased, especially given the fact that it is snowing like crazy right now.
