Joined a few weeks new to forums but I think I figured out.  Went to Holiday Cook-Off for Kids, never been to a barbecue cook off before, had a good time.  Everyone I spoke with were down home and friendly.  Started smoking a couple of years ago still working out the kinks but an enjoying it.  The wife offered to by me a new smoker for Christmas and thought hey what a better place to see what works so went to the cook-off asked a few questions and seen what is popular.  Picked up my new 18 inch Weber Smokey Mountain smoker Friday and plan on breakin it in for Christmas.  Hope to make more cook-off's and maybe become a judge if my work schedlule allows, missed the last instruction held will look for the next one.  Thanks for making me feel welcome.

Welcome aboard, Chuck.  ;D

Once you break in your smoker, you'll be able to answer "How much wood does Chuck chuck into his WSM?"  ;)

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!
