Hello, got my WSM as a gift about two months ago and have almost become obsessed with it. Done ribs and a few butts, but this morning trying my first brisket. Hope it turns out well.

Welcome Jay. I got a WSM as well about two months ago (bought from Jaybird) and have been obsessed also. The WSM turns out a mean brisket just watch the temp. and you will be fine. In this nice desert heat my WSM tends to run hot even with a full water bath. You might want to use a little less fuel and you will be fine.

Just pulled the brisket off and hope to have a couple of pictures (battery on the camera is dead). I foiled it for the last 2 hours with a little apple juice, thinking it might be getting a little dry (temp 170), was a 7# for about 11 hours with hickory and apple. Hope to post pics. Thanks for the welcome.

Welcome to the forum. I haven't licked Brisket yet. I cooked one at about 240 for over 15 hours, only got to 170 internal, tough as an army boot. Can't keep my pit under 300 when its halfway there just sitting empty. 3 briquettes, and its at 285...
