Hello all, I've been in Yuma for bout 2 years now, originally from Arkansas.  I'm in the Marines and have been bbq'n for the last 15 years or so.  I have tried different bbq's from coast to coast and also overseas and have incorporated alot of what I have learned from all the different places into what I do now.  I am looking at starting a catering business here in the next 6 months to a year to get my feet wet before I start my own business when I retire in 4 years.  I will be posting pics of what I have done already on another thread shortly.

Welcome. Enjoy the madness. Lots of fun and wizened BBQers here. I'm not one of them. Well, maybe fun. I haven't burned enough meat properly to be wizened. Although I've been called a wise end. They just used some other word for "end". What was that word again??

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Well its obvious that Kitch has enjoyed the madness too long, or the sun has gotten to him, since we know he has been called "that word" enough times for him to know better. Don't let him fool you, pretty soon he will show his true colors and you too will be calling him "that word". But I did"nt say that...

On our way to Cali (to see family) sometimes we stop by Famous Daves  for a bite to eat. You ever been?  Not too bad for a "chain" restaurant.   If you stay away from he brisket you are usually fine.

Yes I've been there don't really care for them that much though.  I prefer the mom and pops type of places myself.
