Hi. My name is Dave, and my favorite colors are Sparkly and Clear...haha
I'm Dave Kitchener. I live in the north Valley, near I-17 and Greenway. I went next door to ask my neighbor if I could borrow his Brinkmann Smoker, and he said I hadda take it cuz he was going to dump it. Turned out to be and electric one. Anybody got a variac? Anyway, the water bowl was rotted thru and one grate was missing. Did you know that a crock pot liner, as a water bowl, works great in a Brinkmann? And Goodwill sells 'em for about $3.00! First time out, I loaded it w/baby back ribs, beef ribs, brisket, pork loin (ON SALE@FRYS this week!) and a chicken. The chicken and the baby backs and about half of the brisket were really good! Now I wanna do it right! I hope I will be able to contribute after I've picked enough brains and Xperimented s'more. Now, about that variac....
This new passion has also gotten me thinking of contraptions I'd like to make. I have 2 non-working air compressors, and there must be a way to turn them into something useful...
I'll be reading here often, and posting occasionally, so I B CN U.

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

My ECB just got a big buddy! $40 and a trip to Laveen netted me Eileen, a Brinkmann Smoke n Pit (with loose legs, hence the name).
She's been mistreated her whole life, judging by the 5 gal. bucket of ashes I took outta the cook chamber. Buried the charcoal grates there--by 2 inches.
Ladies and Gents, I present--Eileen!

A few mods and I understand that you can turn those into a pretty mean smokin machine.  I know one is to bring the smoke vent down to the grate level.

Good Luck and nice find
