We don't care. We're using fire for cooking. We're exempt!
I'll find the link...
And I have done so...

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Thanks for digging that up, Kitch. I recalled seeing something along those lines, but didn't know where to find it.  :)

OK, just down the street from me, there is a roofing supply company.  Becuse of that hailstorm a while ago, they are doing a land-office business.  2 or 3 days a week, there are up to 10 BIG trucks, waiting to unload, sometmes waiting ALL NIGHT!  Those ID10Ts leave their noisy, rattly smelly diesel engines running ALL NIGHT, and this is perfectly all right, but someone wants to complain about my charcoal fire?

I DON'T THINK SO!

Currently cooking with a newly built UDS,(thanks to Skouson, my brother) which is my current best smoker.  I've also got a Weber Performer, also from Sterling.  My brothers think I'm CRAZY.  (Strangely, they're right.)

I've been noticing lately that when they announce a no burn day on TV, they say open pit, open fire something or other...I think that helps exempt us with the lids on our Webers and drums, and the closed trailer smokers...
And it's all for cooking anyway!
