I envision something like an Arizona version of a Juicy Lucy, stuffed with a round slice of a meltable Mexican cheese like a Oaxaca and a roasted green chile. Wrap the whole thing up with a bacon weave and toss it in the smoker until golden brown. Serve it on a Telera roll. Damn, I'm making myself hungry. I bet it would sell like gangbusters. You could call it a "Gordo" or a "Juicy Mark" in my honor.
