Hello Guys and Gals, if you are in the mood for some BBQ come by the Hog Pit Smokehouse on Tanque Verde Rd in Tucson. I have been given an opportunity to make BBQ the way I would like to eat it. I think we are well on our way to becoming one of the best BBQ restaurants in Tucson come by and give us a try, Let me know what you think. We will also be hosting a Brisket comp. on April 23rd check it out in the upcoming events.

Stopped by and saw Mark the other day. He's doing a great job with the food. Ribs were awesome. Beans were fantastic too. I'm hoping to stop by on the 23rd. Congrats Mark, and I highly suggest going there and trying the food for anyone down here in Southern AZ.

Congrats Mark, very Happy for you.  You certainly have a good thing going there.  Enjoyed seeing you last week and I know we are really looking forward to the Brisket Comp there on the 23rd.

Tracey, hope you are planning on bringing a Brisket out, you should challenge some of your work mates and have a few of you do them up..  Just sayin!!   ;)

Good Luck with it all Mark, we wish you much success..

I'm hoping I can get the day off. I think Catalina is planning on entering, I'm not sure if they will enter as a team or have each person prepare something. If I cant make it I may cook one off and send with someone to enter for me. Are the judges certified?, basically competition brisket?

Absolutely. You cook it, cooler it, bring it whole/ready to the Hog Pit, and there they have a few cutting boards. You get the box there, and you slice and box it onsite. You can use this to test different recipes/techniques/sauces, or bring your standard brisket entry to go up against everyone.

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!
