It ain't smoked.  ???
But they don't advertise in any way as smoked Q. All advertising just says BBQ.
They are always busy and have moved from a small hole in the wall in Old Bisbee to a much larger location after several months in operation.

Tried the pulled pork the other day and it was decent, flavor wise, and large, but there was absolutely no bark or any other indication that the pork was smoked.
Gave 'em the benefit of the doubt today and got a half rack of BB ribs with one side for a little over $12. There was no smoke ring, they were a bit dry and smothered in sauce.

I wish them success but probably won't go back. My cooking is better.

If it is they same owners from the Bad Ass here in Black Canyon City, they do not smoke it. I was told that they Par boiled, Presure Cooked and really sauced.

Open Baked ?
Not sure but I don't think the ribs are boiled first. I still remember the days when I thought that was "the way" before I put em on the grill.

They are local folk to the best of my knowledge. Again, it wasn't bad, just wasn't smoked. Cowboy beans had chunks of celery, bacon and onions and were pretty good.
