I have been looking for a recipe for some good mac an cheese if anyone is willing to give one up. Most of the recipies that I have tried have involved a rou, don't think I spelled that right but it is a combination of a fat of one sort or another and a liquid used to thicken a sauce, and I have NOT been happy with the texture of the sauce. It always come out "gritty" Any sugestions would be a GREAT help. I am MAC and CHEESE handicapped, and it is driving me nuts!!!!

Yes, Dean does do a good Mac and Cheese. Might have to do a Mac and Cheese mini-comp sometime and try some of these other recipes side-by-side.

Chef Martin, I am making your's tonight. We're skipping the diced tomatoes. If I had my way, I'd be putting habaneros in it. As it is, I'll douse my portion with Mrs. Renfro's Hab salsa. Excellent stuff. And hot enough. (That sounds like a refrain.)
Chef Martin's is a casserole, with a meat crust, and shredded zucchini, broccoli and tomato sauce in it. Sounds like a great meal.

I'm cooking some ghetto mac and cheese now. Just stuff I had laying around. Evaporiated milk, butter, jack, colby, cheddar, maple smoked bacon. Just have fun.

Ghetto mac and cheese? Sounds like college, or bachelor mac and cheese. Makes it more appetizing. :)

It will plug a hole, thats for sure. It was ok, not great. Heres a pic of it cooking with some burgers stuffed with jack, chedar and bacon. Burgers were great.

Izzat a GAS stove? <LUST> Actually, I just want something newer. My electric stove has a label in under the burners that says "Prototype". What's that mean, anyway? It looks like the first one invented...
My stove is so old---it's the one they used to cook the last supper...
My stove is so old---it's 'Inspected by' tag has a Roman numeral on it.
My stove is so old---it's list of authorized service men includes guys named Edison, Marconi, and Tesla.
OK. It's not really that old, but it cooks like it.

Na, it's a pellet feeder. I cooked down some fat from a brisket to give it a little more flavor.
Well my stove hasnt worked in 3 yrs. Stove does but oven pours gas out, so we havnt used it in years. Go ahead with the white trash jokes, they are deserving. I'm from MD.

Yes, I meant the range in the house. I don't have gas to the kitchen, and I hate electric stoves. Whattaya mean white trash, I'm from MD, anyway! lol

I used Dean's recipe for my wife and grand daughters... The kids loved it but wife said it was good but not exceptional. A few days later we had it again but before I heated it I added some white wine, dried onion flakes and hot sauce. A lot more flavor but away from traditional mac and cheese.

Last year a friend of ours held a Chili contest and 11 participated. I took first place. This year she decided to do mac and cheese. I used the recipe from Dean with slight variations and YEP took first place with 9 competing. Next year she's talking maybe pulled pork.....I am ready.
