Cochinita Pibil from Yucatan Mexico. It was very good and I hope you like it and enjoy
12 lb boneless pork 6-in Pisces
2 banana leaves
Marinate overnight
6 oz achiote paste
1 cup lime juice
1 cup orange juice
1 tsp black pepper
1 tsp oregano
1 tsp cumin
1 tsp cinnamon
2 onion
6 tomatoes
5 garlic cloves
4 tsp salt
6 bay leaves
make a puree whit all the ingredients except the bay leaves and marinate the pork 4 hours or overnight.
Next day hold the banana leaves directly over the flame for a few minutes until they soften. fold the pork whit the banana leaves
smoking the cocchinita it will take you about 5 to 6 hrs all depends on the temperature 200 to 230f
Onion salad
2 red onions sliced
4 cups sliced radishes
salt and pepper
lime juice you will need enough to cover the ingredients
mix all the ingredients 4 hrs before serving
salsa
2 cups chopped red onions
4 cups chopped tomatoes
1 cup lime juice
1 cup orange juice
8 chopped habaneros
combine all the ingredients 2hrs before serving

serve the Cochinita in a taco whit the salad and salsa. Small cups add you stock whit lime juice, chopped onions and chopped cilantro next to the beer
grill pineapple whit fig and peach cream for dessert
