Last sunday I smoke some pork for my family so it was for 16-19 serves

Cochinita Pibil from Yucatan Mexico. It was very good and I hope you like it and enjoy

12 lb boneless pork 6-in Pisces
2 banana leaves

Marinate overnight

6 oz achiote paste

1 tsp black pepper
1 tsp oregano
1 tsp cumin
1 tsp cinnamon
2        onion
6        tomatoes
5        garlic cloves

6 bay leaves

make a puree whit all the ingredients except the bay leaves and marinate the pork 4 hours or overnight.
Next day hold the banana leaves directly over the flame for a few minutes until they soften. fold the pork whit the banana leaves

Thanks crash and mike

crash about the banana leaves. I think, you can find them in almost all the supermarkets, but maybe will be easier to find them in a Latin supermarket. I got my banana leaves from Fry's. I know food city and ranch market has banana leaves too. I hope you can find one close to you.

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

8 chopped habaneros in the salsa.  Man my a$$ started to burn, with just the mention.

Do the banana leaves add flavor??  Does the smoke get in??  It does sound good

There's a FILIPINO market at 24 st. and OSBORN, across from MR SUB and they use to carry them!

yes toys4dlr. when the banana leaves star to smocke add a pretty good flavor and also help to retain the juices.
