Sheltered the UDS and WSM to work some in some spares and a shoulder. Used rubs from John Henry. The shoulder took 14 hrs, but in the end was worth it. Had to keep telling myself it'll be done when its done. Stalled at 185 for seemingly forever, but I waitied it out til 195 (just meant more beer, so it wasn't a painful wait). Camera kinda screwed on the ribs, oh well........but here is a note, did I discover something? I experimented w/ light coat of light brown sugar about an hour before I pulled one of the spares. Left a nice shiny sweet sticky sheen w/ some non sweet sauce. Worked great w/ taste. Might have pulled them about 1/2 hour too early, but the flavor was great! Hmmmmmmm
