I almost didn't believe my patio thermometer when I woke up this morning...70 degrees!  Perfect day to barbeque the 22lbs of spare ribs I got from Food City the other day.

Forget the "how many licks does it take to get to the tootsie roll center of a tootsie roll lollipop, Mr. Owl" question...I think I've solved the "how many racks of ribs will it take for my smoker to get to capacity" question.  The answer, as obvious in this photo, is 4. And I'm really pushing it.

They went on at 8 a.m.  I hope I didn't start them too late.  If they're not done by dinner time, the wife will be upset.  I don't think I've been a good judge of my cooking times so far, and her patience is dwindling.
More pics later as they progress and finish.

Spares don't take as long as everything else. Well, longer than chicken. They may be done as early as 3 ish. I was trying to nap, but I've got tons more prep to do if I'm going to smoke ribs later. Ugh! I"m FRIED, not smoked!

For cooking, lower and slower. For spices, mo' hotter, mo' better. Habaneros rule!

Here they are, three hours in, after I rotated them.  Come on, noon...I need a beer!  It's 12:00 somewhere, right?

Nice looking spares...

I have a set of those BBQ tools, got them as a gift a few years back. They are Craftman from Sears but have "not guaranteed for life" right on the handle.  :D :D

Being an electrician by trade, I have a set of Klein cooking utensils.  Nice to have, but not the most practical ::)

I saw the Klein bbq tools a while back at Graybar. Got the craftsman bbq tools for father's day one year. Nice conversation piece when you break them out.

Ok, got the laptop plugged into the router...back online!  Here are the rest of the pics.

With the ribs nearing, it's time to start the pasta.  Getting ready to make the dough.

Dough finished, wrapped, and resting.

The dough cut into pieces ready to roll.

Rolling the dough sheets

Cutting the fettucini

The noodles, all cut

The noodles and the alfredo sauce cooking

The finished fettucini alfredo

And the finished ribs.  Someday, I'll learn to trim them first.
