new years day cook

New Years Day, had to start it off right. I fired up the small offset smoker to smoke a Mashed Potato Stuffed Meat Loaf
We thought of having meat loaf and mashed for dinner and came up with the idea to put the mashed potatos inside the meat loaf and then smoke it. I smoked it with alder wood, a light smoke but imparts a dark bark on the meat. I ran the temps about 300 for around 2 hours and it turned out great!!!

Great, now I want to eat that!!  What else is in their with the mashed potatoes, is it sausage?  Looks yummy!
