This weekend, my brother asked me to cook up some pulled pork for his Hawaiian themed party.
I smoked about 15 pounds of pulled pork. I injected about 24 hours in advance with a pineapple based injection and rubbed with Hawaiian salt and some other spices similar to what you would find in a "jerk" style rub.
Grilled up pineapple slices, made some slaw, and made a Dark Rum BBQ sauce.
Got lots of positive feedback and I though it was quite tasty myself!
