Brisket

The last two weekend we've smoked up brisket.  Here are a couple visuals of the results.

This is the brisket we smoked on October 14, 2006.



And this the one we smoked on October 21, 2006.



I think I'm gonna head over to the fridge for some leftovers.

Now I'm hungry, that looks very tasty, and great smoke ring...  Bark looks fantastic as well.  Certainly mouth watering....  ;)

We're gonna smoke one more this weekend but this time I had the meat trimmed by a professional butcher.  It was absolutely amazing watching his knife fly through the meat as he removed the unnecessary fat.  I tried doing that at home once and he did in 5 mintues what took me almost an hour.

Always trust a pro to do the job right!

Did you inject these at all?  If so, what did you use?

Yes, we did inject and plan to again this weekend and at the competition.  The October 14 brisket was injected with a beef au jus mixture and other spices known only by "The Goddess of Magic Flavors" (my beloved girlfriend and BBQ Teammate).  She holds her seasoning mixtures pretty close to the vest and even I don't know everything she uses.

The October 21 brisket was injected with a similar mixture but Dr. Pepper was substituted for the beef broth at the suggestion of some crazy Sun Devil fan.  Team loyalties notwithstanding, his suggestion proved to be a great enhancement to the flavor.  We'll likely use that same mix for this weekend's cook.

Cool, I'm glad the Dr. Pepper enhanced it for you.  You can thank DDog for that, he was the one that got me believing in it.  Who would have thought Dr. Pepper would do that..  ;)

Dr Pepper just adds something to BBQ'ed meat that nothing else can add. Try it you will like it!! ;D ;D ;D

Another weekend, another brisket.

Here's the brisket we smoked on October 28, 2006.



After the Lake Pleasant event, I won't be smoking any more brisket until all the leftovers we have in the freezer are gone!

Hey VQ!
Nice lookin' brisket... The bark looks so yummy...
Question on the DP injection mix:
  • What is the ratio of DP to spices?
  • What spice do you use to make you brisket?
  • How long did it take to get the bark that way?
  • What did you put on the outside of brisket
