I have done the dino bones a couple of times. I cooked 3-2-1 method just as you would spare ribs. I made a rub with less sugar in it. There was no issue with them being moist and tender, but they were greasy and just not great flavor. I have grilled the ribs that were cut short. They are called finger ribs at the grocery store around the corner. They look sorta like a rack of BB's. Didn't much care for those either. At this point I get the flanken cut beef ribs for grilling kalbi (korean ribs) or short ribs for braising in beer, otherwise, I stick with the pork.
