Very challenging. I have better success slow grilling. If you have success let us know. Just make sure they are meaty!

Be kind, polite and courteous to everyone you meet, and ALWAYS have a plan to kill them.

I have done the dino bones a couple of times. I cooked 3-2-1 method just as you would spare ribs. I made a rub with less sugar in it. There was no issue with them being moist and tender, but they were greasy and just not great flavor.  I have grilled the ribs that were cut short. They are called finger ribs at the grocery store around the corner. They look sorta like a rack of BB's. Didn't much care for those either. At this point I get the flanken cut beef ribs for grilling kalbi (korean ribs) or short ribs for braising in beer, otherwise, I stick with the pork.

I also have not had much luck with the Dino bones. They just seem to srink way to much leaving not much meat. If you figure It out please let us know.

The ribs turn out pretty good but not near meaty enough.

I will after to try one more time on the Beef ribs as I do not like to judge on just one try. My taste buds might have been off yesterday. The suggestions were appreciated thank you,

I agree with Bear on the flanken cut beef ribs for Kalbi.  Only type of beef "ribs" I'll eat.

If you need a great recipe for Kalbi, let me know.
