At the last minute we decided to try out the WSM on barbequed chicken. We didn't do anything fancy, just loaded a lit a chimney of charcoal into the cooker and loaded the top grate with thighs covered in rub. They got a dunk in some sauce about 20 minutes before serving and they turned out great.
I'm fast becoming a big time WSM fan!
