Applewood Smoked Chipotle Bacon

Just finished my first batch of homemade bacon, and all I can say is I will never pay $3.00 to $5.00 a pound for bacon. Next batch will have more chipotle in it.
I have to say Thank You to Tracy(bbqphx) for her earlier post that got me started with this.

how low is you temperature on bacon, I have never done it either!!
Smoked it at 135 till it reached 128 degrees, at that point you go back to 120 until you get the bloom you want.

I have to figure out a way to get my Traeger to cook lower. Thats some of the best looking bacon I have ever seen. What do you mean by bloom?

It's the color or darkening of your product from the smoke. The theory here is that you're done "cooking" the bacon before it's done taking smoke on. So, you stall it and continue to apply smoke. I use a 30# electric smoke house with a cold smoke attachment. It gives me better temperature control, don't have the wood burning inside the smoke house. The wood burn pot is attached to the outside of the smoke house.

So where did you get that lean of a pork belly?

Lee Lee Market in Chandler. Bought a case, two full bellies, about $2.00 a pound. Before I brined them, had to trim them out. Still have the skin on. Next time I may buy the bellies they have trimmed, $2.40 a pound. ;D
