I really don't mind a list or not but it is cool to see a top team on the list knowing that you're going to be going up against them. Not having a list wouldn't make or break a comp for me but the timing, finances, getting time off work, and weather are the biggest reasons for me to not do a comp.
I have to agree with you, Scott, I enjoy seeing big names and quality cooks at competitions to validate my abilities. It is better to look at the scores and see I am only X-points behind some of the best even when in last place but can then can concentrate on how to be better while learning what the Judges expect. The hardest thing with the competitions is the timing, I spend most of my time not working in the catering business as most of my work is on Fridays, Saturdays and an occasional Sunday. Sad to say, the only time I work is when Competitions are happening, Friday and Saturday! Finances is another motivator as it is not a very profitable hobby but fun when I can afford it.
