WSM Question

This is question for all who have WSM's. Do you use the water pan with water or do you use a clay saucer or do you use other means to help with temp control. Looking foward to hearing some of your ideas especially those that compete with them. Thanks for all your input all in advance.

I now use rock in mine.I have tried water,foil balls,clay saucer,and sand,and about 1 inch of rocaks and 3 sheets foil has worked the best for me,no hassles,little clean-up  ;)

I tried gravel, sand, of course fluids (water juices..etc), lava rock, tiles, but I just started to try river rock covered with foil.. So far it's been the most consistant with the least amount of maintnance. Good luck

Perfect Q = Tender succulent meat with a savory rub, cooked low/slow with aromatic wood. Sauce is just another condiment.

Hey Mark! That's like saying if you tell me how to play basketball then I don't need to practice to get into the NBA. There is really no specific answer to your question. It all depends on what works for you. If you ask you can get a million different answers as you can see below. None of them are wrong. It's just what works for that person. The answer depends on:

How cold the meat is when you put it on.
What type of rub are you using.
What type of fuel you are using.
What type of wood you are using.
How much wood you are using.
Are you mopping.
Which thermometer are you using.
How big is the meat you are using.
What temperature are you cooking at.
Is your cooker in the sun or shade.
etc., etc., etc.

You will not know the answer until you practice and try all the different things. Keep it simple brother.
