We want through all the health department crap etc last year and they were strict on the 3 bin system and not prepping inside a camper, but as far as where the meat came from, it was KCBS reps checking so they did their thing and not based on the 4 pages of stuff from the HD.  They didn't request receipts from where we bought them either.  And, there was not an issue with keeping them at the right temp because our pork butts were FROZEN SOLID when we got there!  Ever seen a pork butt bounce in front of a KCBS rep??   :laugh:

Had the same issue with our Brisket last year.  I thought I would use it to keep everything cold on the trip and it would defrost after we got there.  Well, frozen solid when gene check our meat.  It did defrost in time and place 8th there, now my other products that is another story.

Congratulations to Jim and Erin of McFrankenboo BBQ on earning 4th Place Overall at the 2010 Pork & Brew, their best ever Overall finish!  They finished 1st in Chicken, 16th in Ribs, 6th in Pork and 8th in Brisket and were the top finishing team from Arizona.

Way to go, Jim & Erin!!!
