Ok all, we have locked in a date & time for this next Brisket Only competition and it will come just in time to get some practice in before the Big November event.
Famous Dave's and AZBarbeque are proud to announce the details for our second ever Brisket Only Contest.
When: Sunday, October 25th, 2009.
Where: Famous Dave's Peoria Restaurant located off the 101 & Bell Road by Arrowhead.
Time: Turn in's are at Noon. Doors open at 11 am. I plan on being there by 10 am to get set up.
Please plan to arrive early as we are going to also use this as a Social for the club as well. Bring out your family and friends and enjoy some of Famous Dave's great food and enjoy meeting and talking with all of our great members.
This will be a great warm up for Pulte. Please bring your Brisket wrapped in foil and in either a small cooler or foil pan so that we don't make too big of a mess.
Here is a list of prizes as of right now. We are hoping to get more sponsors to jump onboard and donate some great prizes for this event.
Main Competition
1st Place Brisket - $100 gift card to Famous Daves and a Famous Daves BBQ variety pack
2nd Place Brisket - $50 gift card to Famous Daves and a Famous Daves BBQ variety pack
3rd Place Brisket - $25 gift card to Famous Daves and a Famous Daves BBQ variety pack
People's Choice
1st Place People's Choice - $50 gift card to Famous Daves and a Famous Daves BBQ variety pack
2nd Place People's Choice - $25 gift card to Famous Daves and a Famous Daves BBQ variety pack
Please sign up by responding here. Entry is $10/Brisket, so if you cook more than 1 Brisket to turn in, it's $10 for each one. YES, you can turn in more than 1 Brisket if you would like to try a few different cooking methods on each and get the feedback. Max is 3 Turn in's per person.
Rules:
Brisket's must be DONE when you arrive, we will not be able to bring any Cookers/Smokers to Famous Daves or use their equipment, so you must have it finished on arrival. Please make sure it is in compliance with Health Dept Rules and keep it over 140 degrees.
We would suggest you cook it as you would normally for a competition so that you can get the practice and feedback from it.
Judges:
We would love to have some CBJ's come out and "Judge" this event. The Judging will be a bit different as we will be looking for feedback on each one so as to help our cooks improve.
The rest of us will then also get a chance to come around and see and taste all the different Briskets.
Bring the family out and let's make a social of it. I'm sure Famous Dave's will have some great food and drink specials for us and our members as well, so let's make it a great day and enjoy another great AZBarbeque event. ;)
Also, I'm sure there will be some great Football games on the TV's there for us to enjoy.

Had a great time last year would sure love to be able to make it this year....maybe I can convince the wife to cook a brisket and I'll come down just for the judging. ;D
I know my brisket from last year was a little over done, but I had to make sure it was hot enough for the ride down! ;)

Since the briskets are brought whole, will each competitor bring their own cutting boards and knives...or will the judges or F.D. chefs carve them to uniform proportions?

Last year most people brought their own knives and cutting boards. Mike had some cutting boards available, which was good because I don't have a good one to carry around. I did bring my own knife but was glad Crash was willing to lend me his when I dropped mine on the ground half way through cutting my brisket up.
Turns in where like IBCA, sliced in a foam container, no garnish just a sheet of thin foil.

Awesome to hear a lot of you will be there, hoping to get 25 Briskets once again.
Cutting boards will be provided once again and we will have knives there if you need them, but we do recommend that you bring the knife you are familiar with.
Each competitor will slice up their own brisket and box it for the judges. We will have people there to assist as needed..

Is it just flats?

Last year I brought the entire packer...cut the flat to be judged and then cut up the point and the rest of the flat for the peoples choice. I believe this is what most people did but i could be wrong.

is this is just like last year right cut, box, sample to 40 correct?........... this year no lettuce or kcbs judging? good time last year did not win but fun.

I would recommend Full Packers, but you can do whatever you like. Just make sure if you want to be in the People's choice part of the competition that you bring enough for that.
It's just small 2 oz samples they get, but you still want to have some left over for them.

Jeff, this is really a fun event/social. It's a good time to practice your Brisket, get some good feedback and enjoy hanging out and meeting others from the club.
I highly recommend all of our members, both new and old, come on out and enjoy a great event..

I am not sure how you meant this but I do not want people being "unhappy" with anything about this event, or any other AZBBQ event for that matter soo...
...we will skip the Brisket and and I'll just come down to judge. I don't care. I am taking the girls to a Halloween Party the night of the the 24th so I can not do a brisket, Krissy said she would take it over, stay home and do it...hell we only use salt and pepper as our rub anyways. ;)

I am in, puts me down for deuce. My 14 year old son has got the bug (how cool is that)! Had his buddies over the other day for smoked food. It's fun to watch him being mac daddy working the smoker and I don't mean like how Johnny works the smoker either, poor pig, my kid is cooking!

This is a "FUN" contest, so let's make sure we remember that. It's a chance to cook up a Brisket and maybe try out a few different methods or recipes in anticipation of the upcoming events.
Ralph, I know Smitty and I know he was just joking, but in all seriously, Ralph is one of the most integrable people I know and if his wife turned in a Brisket and he was judging, I know he would not give any favoritism. Heck, he probably wouldn't know it was her Brisket anyway.

I'll take a stab at this one Jim, as I'm seasoned, with one whole comp under my belt. You'll use two-ounce cups, and put whatever fits into them, not an exact science. There's not much time to weigh it with a line at your table.

In regards to the peoples choice..."Last time...the remaining brisket that was not turned in to be judged was sliced/cut up and placed in another box...basically a big box of brisket and then the boxes were assigned a number and set on a table...people walked around and tasted each one/what ever they wanted and then voted. Very informal and fun."

Thanks Ralph, you beat me to it.
The Full Brisket will be brought to the event.
It will be sliced up by you at the event and placed in the box we provide you.
You will then cut up the rest of the Brisket and put it into another box where the public will come around and use a fork to grab a slice or chuck. The boxes will have numbers on them and the public will vote on the numbers.

Looks like the wife and are going to give this a shot. I just had shoulder surgery so she will have to be the one that does most of the work (in her mind). That means she will take the credit if it's good and I will stay up and watch the fire and take the blame when it's bad. :-[

Peoples choice is just the left over part of the brisket that you turned in for the comp...just cut up for people to try and then they vote.

People's Choice is just your left over Brisket for our members and the public there at Famous Daves so they can all try them out.
We are changing the rules of the People's Choice this time. This time, we will have 6 - 10 people chosen as our People's Choice judges. They will go through the line with everyone else and taste all the briskets. They will then turn in their choices to us to determine a winner. This seems to be the most fair way of doing it.

Come on members, this is a fun event for you to practice on your briskets. The cost is just $10 per Brisket as we want to keep it affordable enough for everyone. (At this price, I don't even break even on my costs for this event.)
Make sure to Bring your Brisket fully cooked and ready to slice and a knife for you to cut it with.
We will have cutting boards, paper towels & turn in containers.
Looking forward to seeing everyone at the event.
If you are not able to cook a brisket, still come out and enjoy meeting all of our great members, some of our great sponsors and taste some great brisket.

I was going to try a full packer too but Sam's on Northsight and Costco on Hayden only had well trimmed flats. They would have made a Playboy Bunny blush they were trimmed so tight! Anyone know who has packers on the North side of town? :'(

Smart and Final at Scottsdale and Thunderbird had full packers last weekend, I saw full packers in a Wal-Mart Supercenter the other day. I'm up on the north end too, let me know if you find them.

I saw packer briskets at frys on Bell and 32nd, not frozen in the bag for 2.99 per lb.

Albertsons carrys them. Always ask to see the ones they have in the back. I do and they are always some nice ones.

Johnny I picked one up at Albertsons 101 and Tatum for 1.99 per pound. I don't like my meat in the back so I took it off the shelf. It was the only one out at the time. Went to Fry's on Tatum and Cave Creek and they were at 2.49 per pound and it did not looke real good.
Thanks for the help Mike and Smitty just proves again that no good dead goes unpunished.

Yes, apparently I have just the best refrigerator ever! Even on the lowest setting it freezes vegetables, takes forever to defrost, etc...Gets beer nice and cold ;D

How long will a brisket stay warm in a cooler to at least maintain the 140 degree minimum? Never cooked where it had to be done at a certain time before. If food wasn't done at dinner time we would just order pizza.
Mike if my brisket isn't ready for the comp can I submit a pizza instead????

Brisket will hold quite a while if you double wrap it in Foil and then either put it in a cambro or a dry cooler wrapped with towels.
I held two that we cooked up for the ASH event from 10 pm at night until we served them the next day. They were still very hot when we sliced them up.

Cheers guys and gals, I've loaded the WSM and will start 'er up in a couple hours (I only have a measly nine pound packer that finally thawed after five solid days). I too tried a little change in my normal injection routine, hopefully it don't bite me in the ass later...Oh well, that's what this comp is about right-trying something new!!

Glad I'm not drunk yet. The Point end was reading 30 degrees higher that the flat. Used the Therma-Pen and realized I hit a fatty spot with the remote temp probe and it was reading way too high. Was on only 5 1/2 hours and it read 178!!! This is a 14.6 pound brisket. Stupid is as stupid does :-[ Moved probe and now it looks like a good long night!

I am happy I read this, I am having the same issue with my 13lb'er... Started at 3:00 and it's reading 177. I was freaking out! I'm going to go move the probe from the point to the flat. All is good now! whew!

Dealing with the typical UDS chaos. 2 13lbers on at 9:30 this evening. Both already about 165.
Due to the way it cooks ( faster ) it always causes me to doubt the Therma Pen, doubt the meat, etc. Anyway, trying a heat diverter in UDS now, hoping to slow things down. Otherwise, I'll be tossing into the cooler about 3:30 and hoping things stay hot till I get there.
On another note, the beer is still cold.....

went to bed at 3... thats enough sleep! for some reason i slept in the back of my SUV though. :'(
