First off I would like to thank Mike for organizing this.
Second, thanks to the guys over @ Big City for putting on an excellent class. The Lake Pleasant event will be my first competition event and this class put on by Big City probably saved me about 6months of on the job learning. I implore everyone to go to the next class that Big City and Mike puts on.
They went over:
-sanitation and safety
-meat selection and preparation
-how to start making your own rubs
-how to arrange meat in the juding boxes
-what judges look for when it comes to taste texture and presentation.
They also handed out a great checklist for anyone that is going to be doing competative bbq competitions. This checklist will serve to be invaluble because it shows everything you will need when going to a competition. I was really sweating having to come up with a good way of remembering everything considering that this would be my first event, thanks so much Big City for handing this out. If you would like a copy of the checklist just PM me with your email address and I would be more than happy to send it to you.
Thanks to the judges that were present there as well that let us know what they look for and what not to do as well.
One of the best parts of the class was that Big City, and Mike invited some pros that have been doing competitions for years. I got some really great advice from all of them.
