Would it be a good idea to have a donation bucket at the holiday party this weekend? If there are going to be 40+ people there maybe we could raise a little money for the family as well. What do you guys think?

we stayed at the Haven Inn and it is really a sweet place, lots of charachter, good rates, but small, I think there are a total of 10 rooms. very boutiquey with a great owner. there are no real ammenities like swimming pools or restaurants, but very comfy and clean. the web site is very user friendly, so take a romp!

We happened into Dana and Dan Christensen last night after the funerals, and they are extremly pleased with our efforts, beyond words. again, we can NOT say enough thank you's for the help and willingness to participate =) We also met Rich who cooks at the smokehouse and he will be bringing his HUGE smoker out to join us and is calling kevin from the Chow Hound caterers as well! we are meeting some terriffic people, and perhaps adding some new friends to the AZBBQ circle.

The family is grateful, and filled with warm fuzzies guys, and that is no small feat after what they have so recently gone thriough.

WHISKEY RANCH

First we want to say from the Duncan family, that our prayers are with the family!

We will attend with our box truck and smoker.
Here is a list of the items we will bring:
     1- Hot dog cart that serves 1200
     1- 6 ft. Grill
     1- 10x20 E-Z up tent
     4- large coolers
     An assortment of serving and catering utensils
     4- Tabletop steamers
     5- Tables
     25 foot smoker and with 6 jet burners for beans, corn, etc.(smoker can cook 950 pounds of product at once).  It also has a oven that cooks at 350 degrees.

I will also try to speak with my suppliers to see what can be donated as far as product.
Please keep in mind that we are fully insured and licensed to sell if we need to get a permit from the city ...if that helps.

HOLY COW! Tom and Jennifer! you have made me go speachless with thanks =)

We are still waiting to hear back from Salvation Army up here, but I have tomorrow off and will be calling every few minutes! I hear that Big lots might be able to donate things but will also call them and anyone else I can tomorrow.

We just do not know how large the donations from Safeway and Walmart will be till we see them!The flyers have just begun to go up and we have a few weeks to get results, its AWESOME to know we can serve so much!

I think this whole mountain will be smellin good =)

Tom & Jennifer, since you are bringing up your big rig, I think we can do without ours.  Would it be OK if we all just helped out with your unit, we could do whatever you needed us to, cook, serve, whatever.  Just let me know.

Eddie's country store has committed to $100.00 of product, whatever we need! I am plugging away at other corporate sponsor types today (day off) and attempting to find out if we need any permits, Fire, or food, or city. It seems I have left messages at every office, but caught no one! LOL! Janine is trying to get a band to be a part of it, one that is all comprized of doctors at the hospital, its rumored they ar QUITE good, and have played at public events in the past.

Knowing that we rae operating during mostly daylight hours, and that we use mostly WOOD power, other than for the band if we get one do any of you think we will need a generator for power? We have not asked the floor store about using an outlet of theirs yet, and I need to try and locate one up here if we do. Caterers, how much power do you require (if any) for heating trays, lights ..etc?

Visited Safeway in pinetop, they have committed
visited show low Walmart, they have committed
Called Eddie's country store, they have committed 100.00
called Shamrock distributors and left a message with Marsha Collins
Called the Flagstaff Pepsi Distributor (there is a local branch but all donations go theu Flagstaff) and left a message with LAura Davis
worked with Steve Johnson GM of White Mountain radio for the public service announcements and live feed on the 6th.
called and left a message with the local Salvation Army and Tina and David Sherman who are in charge there to collect the food  donation vouchers and give us the donation slips
Called and left a messsage with the local fire department regarding permits
called and left a message with the city of show low about permits
Called Basha's but they need a 6 week window to donate
Have had no luck getting thru to JCPenney, Big Lots or Sears so far....same with Home Depot
 
I have yet to call the party rental place to see what generators they have to rent and how much they cost as those places usually do not donate what they make a living renting...lol
 
I have yet to contact the local printers to see if they will donate the printer service for the Tastin tickets...
 
but the day is long and I have miles to go before I sleep...lol


Just heard back from David Sherman of the Salvation army, he says he will collect the vouchers from Safeway and Walmart, and also have the local shelter on hand if there is left over food after our event. YAY! he told me that small monetary donations do not require a tax deductable slip, but large ones do, he didn';t have the time to explain what *large* translates to...I asked about having a donation bin on site and he said, ONLY for donations of new things. The Salvation Army has rallied and given the family some money for new clothes, both the valley offices and the local ones up here as well. Janine has found a property that could be made into a rent to own for them if the cash situation is right (and I believe we will be helping with this =) ) That currently has an older building on it, liveable for now, and Dan her brother is a builder, so later he can build a stick built for them on the extra lot that is attached , fingers crossed on that one!

The Duncan's have voulenteered to coach me in about an hour regarding what permits and such, and how to go about this all more effeciently, THANK YOU TOM AND JENNIFER!!!!
since it is a parking lot I am assuming we will need some kind of permits...if I don't get call backs in a short while I will call the fire dept, and the city again=)

Tomorrow we will be going to the other businesses that share the part of the parking lot that the public will be using to park in to get permission for this. I will also see where we can get power from the floor store.

Looks like we have Pepsi on board! WOOHOO!

I have the fire marshall set to do a permit on the tent(s) and the fire extinguishers. the city needs a call back, and the permission slips are done, as well as a template for the silent auction and the tastin tickets. also need to get ahold of the city for permits for a public gathering, and the health dept, but then its all about the donations again!!!
I need help (advice or I will send a file to a more word savvy person) to make the tickets tiled for cutting!

Not too sure on the power, I have asked and not gotten an answer from an equipment rental company about a generator, I think I will also inquire about a porta potty, not sure the store wants all the potty traffic  ;D

we will stay posted, tomorrow is another day!

Handwashing / Personal Hygiene
∑ 5 Gallon container of warm (900 F) water
∑ Soap dispenser
∑ Paper towels
∑ 5 Gallon container to collect waste water
∑ Be sure that the water dispenser has a spigot or similar device
that can allow a continuous flow of water. Even with the use
of disposable gloves, hand sanitizers, or ìsanitizing
wipesî, all of which are helpful, frequent and thorough
handwashing remains essential for preventing food borne
illnesses.
∑ Food handlers are not to smoke, eat, or drink in the food
booth. Hands are to be washed upon entering the booth and as
necessary to keep them clean for food handling.
∑ Nobody who shows symptoms of a communicable diseaseó
cramps, nausea, fever, vomiting, diarrhea, jaundice, etc.óor
one who has open sores or infected cuts on the hands should
be permitted inside the food booth.
Food Temperatures
∑ Potentially Hazardous Food shall mean any food which consists in whole or in part
of milk or milk products, eggs, meat, poultry, fish, shellfish, all cut melon, or other
material or synthetic ingredients capable of supporting rapid and progressive growth
of infectious or toxigenic microorganisms. Examples are hamburgers, tacos, hot
dogs, spaghetti, and chili. Cooked rice, potatoes, and bean are also considered to be
potentially hazardous because they will support rapid bacterial growth. All
potentially hazardous foods must be cooked to an internal temperature as follows:
∑ Poultry, Stuffed Meats, Stuffings containing meatÖÖÖÖÖÖÖ...165O F
∑ Ground BeefÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖ..155O F
∑ Pork, and any food containing porkÖÖÖÖÖÖÖÖÖÖÖÖÖ..150 O F
∑ All other potentially hazardous foodsÖÖÖÖÖÖÖÖÖÖÖÖ...140O F
∑ Reheating- All potentially hazardous foods that have been cooked and then cooled,
shall be rapidly reheated to 165O F or more throughout within 30 minutes, before
being served or placed in a hot food storage unit. Crock pots, steam tables, or hot
holding units are not approved for cooking or reheating of foods.
∑ Thawing- Foods are to be thawed in a refrigerated unit at temperatures not to exceed
41O F, under cold running water, or in the microwave as a continuous cooking
process.
∑ Holding- Potentially hazardous foods must be stored at temperatures below 41O F or
above 130O F at all times, except during immediate preparation.
∑ Thermometers- A metal-stem cooking thermometer must be available and used to
verify proper temperatures and internal food temperatures. Obtain a thermometer
which reads from 0 to 220O F. All refrigerators and other cold holding devices must
also have an accurate thermometer.

Sanitizing/Dishwashing
∑ Sanitizer- Sanitizing solution used in dishwashing and in wiping cloth buckets must be
maintained at proper concentrations at all times( unless the manufacturerís guidelines are
provided and specify otherwise).

IodineÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖÖ..12.5 parts per million

∑ If you choose to use bleach as sanitizer, the recommended concentration is Ω tablespoon of
unscented liquid bleach added to 1 gallon of water. Do not add soap to the water, because
the soap ìtiesî up the available chlorine making it ineffective as sanitizer. Sanitizers must
be labeled as such and be provided with the manufacturerís use guidelines. Chemical test
strips are required to verify the proper concentrations are reached and maintained. Store all
chemicals ìlow and awayî from foods.
∑ Wiping cloths/towels used for wiping down counters and table tops must be clean and used
for no other purpose. The towels must be rinsed in sanitizing solution frequently.
Note: It has been found that flies will avoid surfaces which have been wiped down with
bleach solution.
∑ Dishwashing- Use disposable cups and plates for food service. Keep your hands off the
food contact surfaces and never re-use a single service item. Use 3 adequately sized (fits
your largest cooking utensil) containers, plastic buss tubs work very well. Wash equipment
and utensils in a four step process:
1. WashÖÖÖÖÖÖHOT (1100F) SOAPY WATER
2. RinseÖÖ.ÖÖÖ...HOT (1100F) WATER
3. SanitizeÖ.ÖÖÖ...WARM (750F) WATER, Proper sanitizer concentration
4. Air Dry
Food Protection
∑ All food must be stored at least 6 inches off the ground and covered to prevent
contamination. Foods and utensils must be covered to protect from insects, droplets, and
manual contact.
∑ Foods on display must be covered and the public not allowed to help themselves to opened
containers. Condiments, such as ketchup, mustard, coffee creamer, sugar, and so forth,
should be served in individual packets.
∑ Ice must be obtained from an approved and licensed source. Ice must be transported and
stored in a clean food-grade container. Appropriate dispensing devices consist of a scoop
with a handle that is not to come in contact with the food. Ice used for cold holding of
bottles, cans, and foods must not be used in beverages.
Waste/Garbage
∑ Liquid waste should not be discarded into streets or storm drains, or onto the ground.
Use a container to transport the waste to a toilet or other sewer connection.
∑ A refuse container with a tight-fitting lid should be available for the garbage.

∑ A temporary food service establishment is a food establishment that operates at a fixed location for a
period of time not more than 14 consecutive days in conjunction with a single event or celebration,
such as Fairs, parades, public exhibitions, festivals, fundraisers, or similar transitory gatherings.
∑ To avoid an inconveniences or problems, you are encouraged to contact the Navajo County Public
Health Services District as early as possible before participating in a food event.
Food Source
∑ All foods must be from an approved source. Home canned and home prepared foods, ice cream made at
home, raw milk, or storage of foods at private homes are not allowed. Any food prepared outside the
booth must be prepared in an approved facility. (Approved facilities are restaurants, kitchens, and food
establishments that are permitted by the Navajo County Public Health Services District.
∑ Food may be prepared at the temporary food booth assuming that the preparation is very simple.
Example: hot dogs, hamburgers, etc. Grills or other cooking equipment may be located outside to
comply with local fire codes.
Booth Construction
∑ Floors ñ Should be water-tight, smooth, nonabsorbent, and durable. Example: tight-grain wood, sheet
vinyl, concrete, blacktop, etc.)
∑ Ceiling ñ Shall be wind resistant, waterproof and extend over all food preparation, storage, and service
areas.
∑ Walls (3 full sides) ñ Should be constructed so they can be quickly, effectively, and securely closed
against undesirable condition. Example: wind, rain, dust, flies, etc.
∑ Counter ñ Should be smooth, cleanable, nonabsorbent surface. Enclose booth from the bottom of the
front service counter down to the ground. Use the front for food service only.

We are bringing smokers from all over this great state! Come taste our award winning vittles!
All donations will recieve a Tastin Ticket (one meal per donation please)
Pre~event Donations can be made at the Bare Tree Stor 4640 S. Whitw mountain Road anytime after December 16th!
Donators at the Bare tree will be qualify for a raffle being held at the Bare Tree Store the 6th.
We will be conducting a silent auction @ the Floor store DONT miss the fun!!
All proceeds will be forwarded Dana Christensen's Family immediatley following the event!

Today we made headway with the silent auction items!

I DVD player donated by WHite Mountain Nissan, 2 oil and lube jobs by Fuller auto, on screen ads at the theatres, 5 broken cases from Pepsi plus a banner, and case prices @ 5.75 unbroken. The meat packers are going to donate any uncleaimed wild game they have at the time, and the Floor Store is donating 2 rugs, NICE!! Christopher's gardens will be getting back to us as to what will be donated as to greenery or services, and the Casino is putting together something! WAHOO!

I will be calling restaurants and stores on my next day off for gift certificates etc to be auctioned off!

Any good news out there?
