Title: Arizona State BBQ Championship Sept 02, 2006

The 1st City of Taylor Sweet Corn Festival and Arizona State BBQ Championship.

When:    Sept 02, 2006
Where:   City Of Taylor Rodeo Grounds. Taylor Arizona
What:     Four meat cookoff. Brisket, Pork, Ribs, and chicken. Bring your own meats.

This event will be held on the rodeo grounds in Taylor. The event also has the fireman games, classic car show, crash up derby, and parade. You can camp overnight and alcohol is permitted however this contest is in conjunction with Taylors sweet corn festival so please keep a low key on the alcohol consumption once the event starts on Saturday. Anyone who cant abide by this will be asked to leave. They are making an exception so that we can drink so lets don't abuse it. We will be setting up on gravel and it does rain that time of year but for the most part it doesn't get muddy and the rain is generally brief. They also hold the fireman games during this event so bring your fire extinguishers. More than likely they will be asking us about them. I haven't decided what entry fees and prizes are going to be yet, but they will be of state championship caliber.

If you are interested in helping put this on please let me know. I need CBJs and anyone who wants to get out of the heat in Sept. to help run a contest. I need all the help that I can get. Also please let me know if you think you will compete. The more I know about how many teams I have the easier this will be to pull off. I also might be limited to the number of teams that I have space for so it will be first come first served. I hope that I can meet the requirements to make this contest a qualifier for the Royal and the Jack. I hope that this contest is alot of fun for everyone and provides a nice escape from the Valley heat.

DDog, this sounds like a fantastic event.  It is the weekend after we get back from our Annual Guys Camping Trip, so I will have to check with the boss to see if I can come out and play, but it certainly is something I would love to attend.

Where is Taylor, Arizona?

What categories are you planning on cooking in?  All of them?

Taylor is just up the road from Show Low. I will be there, haven't decided on competing yet. Think I just may. I will be teaming up with Aaron getting organized and trying dig up sponsors in the white mountain area.

That does sound appealing.  If I can't come to help compete with you guys, I will at least come to say "Hello" and check it out.  I really want to help out though.

Ddog, what type of sponsors are you looking for?  We might be interested in doing something to help out.  I also have a core group of sponsors depending upon where the event is and what type of exposure it will bring.

I think you should both compete in this contest! I have done 2 BBQ contests and I am totally hooked. It is fun to meet all the other BBQ teams and the competition aspect makes it challenging! But if we want to have more BBQ contests in AZ we need to have as many teams as possible there.

Plus Sept 4th is Labor day. So that weekend is a three day weekend and you are already up in northern AZ! Nice!

I agree with you, we do need to get more people active in these events to make them a success.  I will let you know here in a few weeks (By the end of April) if we will be able to compete, this should give us enough time to check the logistics and check with the boss  ::)

Off subject a bit, what is required at competitions like this for the rigs?  Water tanks, Sink, etc. ???

I have heard different requirements and would like to know so we don't get ticketed.

No they are not that strict. They might require that you have a wash basin for clean up and a fire extiguisher. Also your smoker has to use wood or charcoal only during the contest. But then again the final rules for this one have not been posted yet so this is only my thoughts.  ;D

I know you know that but some people do not understand the difference between BBQing and grilling. I know I have explained it to people a bunch of times! ;D

I e-mailed Aaron last night and asked him to log on and post some more details about this event.  I would really like to compete in this event.  Hopefully we can get all our ducks in a row here in the next few weeks and commit to it.

Any idea how many teams are currently registered?

Not sure how many are signed up yet. Aaron has been doing the chicken with head cut off routine. I have been keeping up with reading azbbqa forums and looks to be a good turn out. Looking like a few teams from NM and CA will be there. I will be a little more in the know after we get to show low. Also if anyone has any businesses or knows any that may want to be sponsors let me know. Aaron is working on getting info packs together.

Depending upon what levels of sponsorship, we would be willing to do something too in order to promote this fantastic web site as well as our grills.

Thom, yea, we could do the whole contest on our cooker, no problem.  We can crank up the temp to get the skin crisp, that shouldn't be a problem at all.  ;)

I met with Tex-A-Que (Patrick) yesterday and he will be heading up to Taylor.  Right now, it's just him and his wife on a team, so he possibly might be up for expanding his team, especially since he will be breaking in his new Diamond Plate Grill up there.   ;)

Check with him if you guys are interested, that would be a great team as well.  ;D

So it looks like everyone is showing around 2:00. So that means that we need to bring food for Dinner on Friday. Then Breakfast and Lunch on Saturday. Right?

 Sounds good to me. I'll bring the baby grill too and do up some mountain eggs and diced taters to go with the biscuits and gravy. I will be trimming the ribs to st. louis cuts so we will have rib tips for snacking and I may as well make up some abt's

I already got my brisket through the organizer of the event, he runs a bar/resturant and got some wholesale for me.  The rest of my team is just picking up their own.  Typically I go to Costco or Sams though.

Errr...its me ...Ess, Cindy again, dunno why Bear is always signed on even on my puter HA! but anyhoo...a question for you regarding the competition, and my wings.

Bear told me that we now know the judges do NOT like hot as in spicy, and all of you who tried my wings know they are SPICY!

so I am chopping lemon grass, ginger and garlic in preparation and thinking (always a good time to think when one is chopping for hours lol) what do you guys suggest? shall I make my wings the same leaving out LOTS of the chili peppers and adding honey? this would still make them spicy (lemongrass, ginger and garlic with a wee bit of chili) but sweeter...

I need suggestions as I will be creating the *new* recipe starting tonite. Bear gets to taste test...and he is brutally honest=) The trouble is we want to be a valuable part of the team, and make the entries count, even the everything goes part=) I have a daydream that my little wings could take us up a notch if done right (or CRASHING to a firey death if done badly!!!! Eeeep)

so, suggestions welcomed =)

Oh! shall I find the recipe and paste it here? ...yup. brb....

5 lbs. chicken wings
1 whole hand of Ginger, young is better, and Thai ginger (real hot) is even better if you can find it. Chope into tiny slivers , about 1/4" x 1" is acceptable, but smaller is better.
1 huge garlic clove, mince the whole thing, if you like garlic, chop 2!
fish sauce (yes you have to use this=P lol) this is the *salt* and you will not salt at all beyond this so use at least 1/4 cup, i use more, and YES the stink cooks off! (also called shrimp sauce, or fermented fish sauce...STOP THAT GAGGING DAMMIT!)
about 1/2 cup oyster sauce

now here is the best part!!!

6 fat stalks of lemon grass, you have to chop these down to the size of glitter, (askin bear what a better refference fer da mens would be)
ok he says ultra fine chop...
I HAVE seen in some asian markets where some ambitious asian ladies have prechopped and bottled the dry lemongrasses...get em if they exist where you live and save the chop time.

this will take you an hour at least and i chop dozens at a time and freeze them myself so that i dont have to take the time everytime i want spicy lemon grass flavor. in my freezer bag is lemon grass, teensy diced thai chilis, minced garlic, and ginger slivers just sos ya know how I do it)

2 huge heaping satay sauce dolops (also called Tuong Ot and ground chili with fried garlic, its a deep burgandy color, usually small bottles)

about 1/3 cup sriracha HOT chili sauce, this is not Mae ploy, it isnt sweet, and neither are these wings=) (also called Tuong ot sriracha)

a handfull of Thai chillis chopped fine, these are those leetle buggers that look like the xmas tree lights...yummy! if you substitute chilis you will get a different taste, but do what you like there.

now you grab a beer or 6 cause they have to marinate all night!!

I like these crispy, but they are good and hot and tasty either way.

Don't think rain will be much of a factor. They have tapered off the last week up here. At any rate cooker has gas assist If I am not mistaken and will be warm even if it does rain.
