Well one things I can tell ya, it really does make a difference..I think. Generally spares take 8 hours. Last pork butt around 6 pounds took 7 hours to get to 195, but could have gone to 200 before I put in the cooler. It was moist, but didn't pull as clean as I like. I left in the cooler double wrapped for an hour. That hour didn't get it to the sweet spot. One is in the freezer, maybe I will pick up another and try one to 195 and 2 hours in the cooler and the other to 200 with one hour in the cooler.
