Title: Which is the best temps for Turkey?
Post by: DanMan on November 17, 2010, 09:44:58 am
Ok I have read low temps 250 and below and I have read higher temps 275 and up.  So which will give the best results?

The one that makes you happy.

Go get a cheap turkey or two and do a test.  I like 256 to 274.

I cooked two turkeys the other day at 256, because I had 11 racks of ribs on at the same time and did not want to bump the temps to 274.  They turned out good, really flavorful.   I cooked a Jenny-o and Butterball, just rub and in the FEC they went.  I hate to say it, but the butterball was really good.  I did not have to brine, as it was enhanced and it was easy.  The total cost of this test, 15 bucks for the turkey's and time.

Do a test run.

Fry's Signature Turkey "basted with butter" brand (butcher told me years ago they come from butterball in butterball boxes), and they are always awesome. Smoked one at 325 last weekend, wrapped in butter soaked cheesecloth and herbs, smoked w/ apple. Came out as juicy as ever. Skin was nicley browned, took the cheesecloth off when the breast temp read 140. Cost: 6 bucks for 11lb bird, 2 bucks for cheesecloth, 2 bucks for REAL butter, and charcoal. EASY! Don't overthink it!

I cooked one a couple of weeks ago and cooked at 250. I spatchedcocked the turkey and injected and every single person said the best they had ever had. Good Luck what ever temp you go with.

I am going to do a test run tomorrow, turkey is brining now.  I will be doing the butter soaked cheesecloth method.  I think I will go to the 275-300 degree range.  I will post pics of the cook tomorrow.
