Call me crazy but back home in South Dakota it was too cold for me outside so I cooked them in my attached garage. Never had a problem. Just have to be smart about it and very careful. Pre-meassure how much oil you need in the pot the day before by putting the turkey in fill up to the top of the turkey with water then pull the turkey and look at the water level. That is your oil level.
