Brine for 24 hours, Cook at 500 degrees for .30 mins, take the temp down to 350 and cook to the right internal temp. Let rest for .30 mins (foiled) Consume lots of wine and watch football! Can't wait!

We're smoking our first turkey this year so it ought to be interesting! Of course we're also cooking one in the oven and deep frying one, just so we have all the bases covered.

Going with the traditional "cooked in the oven" for Thanksgiving but I will be doing one deep fried and one smoked for Christmas Eve dinner as we are having friends over that night.
