Title: My new smoker is here.
Post by: Harpo on August 05, 2010, 05:49:49 pm
I pick up my new Good One Chuckwagon in the morning. Any suggestion on how to season it. I pick up 4 bags of charcoal on the way home to use to fire it up when I get home with it. Can't wait for first cook on it.

Spray the insides with (pick one) cooking oil. Some say Pam, some use the pump pressure sprayers, with canola/peanut/soy whatever. Then just run it like a smoker!

Any rusty spots ( yes new ones have areas of rust) sand or wire brush off then rub inside with cooking oil/ or spray pam type product inside or like i did-rub down with bacon grease! Light fire and let it season for a few hours /don't cook during this process!Should be ready to go for next cook which i'm sure in your case will be the very next day! Congrat's on your new pit and have fun!

Sprayed real good with spray oil. Fired up the smoker side and the grill side to season. Got some pics of the event. Had to take one one of the handles off to get it thru the gate but finally got in in the back yard. I couldn't wait and had to throw some Bologna on there and my god the smoke flavor was awesome.

Nice pit.  I just seasoned my new one today too...  I used a rag to hand wipe on peanut oil.  I then brought the temps up to about 400 to bake it on.  It turned a beautiful golden color inside.  I can't wait to cook on it tomorrow!!!

The only problem with a new, pretty pit that everyone want to peek into is that it'll throw your cooking times off. I've had it happen two times cooking on a Kamado in Vegas and in Sacramento. Both times were demo pits provided by Kamado, so I couldn't exactly say no. I was happy to show off the cooker and its capabilities, but it is something to factor in during a competition with tight turn-in times.  ???

By the way...the big Kamado in my photo is what I won in Sacramento, so I guess it didn't hold me back too much. At Vegas, I walked away with nothing...but then that can be said of many visitors to Sin City. ;)

Go to Vegas in a $15,000 car and go home in a $100,000 Greyhound Bus. I think I will start a photo album with pics of cooks to have to look at.
