Yeah. Anything that direct heat from below would dry out or flame. The same goes for my ceramic cookers. I put a disposable aluminum pan and pour in a big 3-lt. bottle of pineapple pop. (I'd pick up both at the 99 Cents Only store.) A cheap and easy solution for a heat baffle. On my big cooker, I have a big "X" cross member to support the water pan. Or I can place it on my grill and put another grill I got at Big Lots on top of it. If the meat is really heavy I put a firebrick on each side for the grill to rest on. You can also use plain water in the pan or Tiki Punch or Root Beer. Both impart a subtle sweet taste to pork or poultry. This method has worked fine for me over hundreds of cooks.
