AZ BBQ Grills Offset Smoker or Grill

Well Been a very long time it seems since I put a post up. I decided to start a new post for this build as this will save time when posting new pics and updates. Here is the grill / offset smoker I am building. Yes, it will serve two purposes, but not both at the same time. These pits will be offered in two sizes 24 x 36 and 24 x 48, the picture shown is the 24 x 48. Here is the layout. The Pit will have an adjustable shelf like a Santa Maria grill and one fixed grate when smoking. Which can be removed and replaced with a charcoal grate when grilling. Spacing between the grates will be between 6 - 7 inches, they will measure 21" x 45". The pit will be set up with a reverse flow system. Meaning the heat will travel below the full length of the grill then back and exit the exhaust. The exhaust system will be a 5 inch diameter pipe measuring 15 inches tall. This should set up a nice draw.  The pit will not incorporate gaskets as my other pits have, but this should not be a factor. Its fabricated from 3/16 steel plate and built to last. If you have a pit similar and have a suggestion to offer up or idea let me know. Also if you have a good name for it to represent our territory arizona I will be happy to consider it.

it looks kind of like a casket (no offense).  How about Boot Hill Cooker.   Can't get much more Arizona Territory than the Boot Hill Cemetary in Tombstone.

Hmm Casket well I hope when I get the handles on it and crank wheel it will change the look somewhat. I think Boot Hill Cooker is kind of catchy. Lets see what other names pop up but I like it.

Build Day 3 - Updated Photos showing the upper and lower grates, doors and Handles. Cooking Grates, air vents, exhaust and door handles will be completed Saturday. Should be able to paint Sunday and Cooking Trails too come. I am also very found of the name' "Boot Hill Cooker".

Build Day 4... So far all has gone well. Here are some updated photos. I have not had any issues with putting the cooker together.  The only issue that I am contemplating is the reverse flow or how to bring the heat into the smoker. I wish to set the smoker up so you do not have to make a major change to operate it as a smoker or grill. Ideas I have are to run the heat to the other side via pipe 3 - 4 inch diameter. This is were the trial and error comes in. If any one has an idea let me know. I am building this grill to learn from I will start trails on Wed and once the cooker is running well I will put together a price. Oh yea when you look at the picture with of the grates... yes there will be another grate on the bottom... I ran out of metal

Finished. After building it I have noticed one thing that I would change, the exhaust, it would be side mounted. Other than that all is good going to season it wednesday.

What type of paint are you using for the smoker/grill?

I use a paint from the Forest Paint Company called,"Stove Paint", the paint in the picture is a bite brighter than it is in person. I used a high temp paint on the vents. This is a link to there site, http://www.forrestpaint.com/. Its a good food grade paint, rated at 1200 degrees.
