Smoker seasoning? - First smoke

 Well, I have my new Masterbuilt XL modified and its about ready for its first run. Pardon my ignorance, but I read somewhere that you should "season" a smoker for the first time before putting any meat in it to cook.
As the local authorities in this area, what do you guys recommend to season a new smoker?

I personally use Peanut Oil in a brand new bug sprayer, it works great.

What I have done is spray the inside with pam cooking spray. I have heard of people using cooking oil. wipe all over the inside and then load it up run it hot till it burns out and wala all seasoned. the idea is to get rid of all the manufacturers junk that was left on smoker.

Interesting discussion on the Leon River site. I was surprised to see no mention of cleaning or seasoning the new smoker before the fists smoke in the instructions. I blew out the cabinet with compressed air when I was insulating the cabinet and cleaned any oil residue that I saw inside. Using the cement backer board as insulation on the inside of the cabinet, I suspect I may have to go for multiple seasoning sessions to get it to seal up good and season well. I better go get some more Pam!

Yea, I always power spray mine out very good before seasoning..

Ok, I cleaned it out good, loaded up a spray bottle and soaked the inside with canola oil. I didnt have any peanut oil or enough Pam, but in my early turkey deep frying days (sounds so crude now), I read that Canola oil has a very high smoke point, almost as high as peanut oil. Plus its high in polyunsaturated fat, HA! Not wanting to waste the gas for a good long sessioning w/o food, I lit a 1/4 full charcoal chimney with mesquite lump charcoal and put it inside on top of the chip pan. This worked out well and got it up to just under 400 degrees constant. First, I let it sit partially open to hold it around 250 for an hour or so and then closed it up for a higher temp seasoning.

It appears so far that my cement backer board insulation experiment is a success!  ;D  The top and sides stayed much cooler than the back that I could not insulate. And the heat really forced the oil into the backer board. I've soaked it in 3 times now and the heat still keeps sucking the oil in. I dont want to hit  it anymore now or it may start to look like my driveway inside.

Now its ready for a first run. Looks like some baby backs for the weekend are in order!

Well, I fired up the Masterbuilt Gasser (MGS) for its first food test. I know, I know, no pics. Sorry about that. I may have mentioned earlier that my digital camera shot craps and Im now waiting for Santa Kids to replace it. Adult middle age does have its advantages.

Anyway, Someone on one of the other topic categories posted a thread about smoking a meatloaf along with a link to http://www.smokingpit.com/default.htm. I have to say this is a great site for the lesser experienced smokers like myself. they have some good videos on how to prepare their recipes and take the guess work out of doing something like a fatty. I had seen references to fattys before, but never payed much attention to them. I had assumed they would be greasy with that much sausage. Boy was I wrong! My first smoke was the Chicken Teriyaki fatty on their site. The only variation I did was I didnt have any Yoshidas sauce on hand and used some spicy teriyaki sauce I had in the fridge. So, my first smoke, first fatty came out incredible!! NOT greasy at all! and the spicy sauce gave them an extra little kick too!!

While I was at it, I did another recipe from there, the Hickory smoked teriyaki moink balls. My wife really loved these, but I was personally a little disappointed. They didnt have quite as much flavor as I had hoped, and I may have left them on the smoker a little too long, as the ground beef was a little dry. I thought they would be inherently juicy, since there is a pineapple chunk inside. But they weren't too dry and all in all, it was a good start for my first fatty and moink balls!! I have to get these dialed in before the new year when we do our annual post hangover party. I'll try some ABT's for that party too. Any great ABT & Moink Ball recipes out there for me to try?

I still have a few tweaks to do on the MGS, but the important parts like the temp control is easy to dial in, the insulation was a success, and the modified water pan worked out great. All I have left is to mod the chip pan and seal up the door and Im there!! Then, I'll be a SMOKIN
